Bradley and Laurie Boyle of Byram Township are the former owners of Bula Restaurant in Newton. Bula received many accolades including those from the New York Times, ZagatSurvey, and The Star Ledger. Having recently sold Bula, the Boyles have embarked on a new venture in Byram. After purchasing the property formerly known as 76er’s Waterloo Inn, the Boyle’s set to work to open Salt, a Gastropub. Of course, the explaining they have had to do is defining exactly what a “gastropub” is.

Back in 1991, the first-ever gastropub, The Eagle, was opened in Clerkenwell, London . What differentiated The Eagle from a typical English pub was the emphasis placed on the quality of food served. In the simplest terms, a gastropub is a restaurant with a relaxed pub-like setting, offering a particular cuisine prepared as well as it is in the best restaurants. Staying true to the format requires a menu that complements the assortment of beers and wines a gastropub offers. Fare at a gastropub is priced to encourage frequent visits to the establishment.

The Gastropub trend made its way across the Atlantic in 2004 with the opening of New York ’s trendy West Village gastropub, The Spotted Pig. Since then, more establishments have opened across the country. After extensive research, the Boyles have determined Salt to be the first New Jersey gastropub. The couple plan to open Salt in April.
