Hey Salty Fans....

First and foremost, thank you all for the positive feedback to the fundraising blackmail extortionist post. It was really great to get that support, you never know when you throw something like that out there what type of response you might get from people....Now on to some Salty news and specials..

When wine drinkers say "I like California Chardonnay," this is the basic flavor profile they are looking for. It is soft and creamy with a balanced flavor of tropical fruits, crisp apple, and vanilla spice. Not too oaky, not too crisp, just right down the middle.- Grape Expectations would pair nicely with the Pork special and its fruity mango chutney.

Salt News February 5

Hey all you Salty friends out there.....

Ok, lets all settle down....THERE IS NO SNOW COMING, OR JUST VERY LITTLE!!!! lastest forcast for Sussex County is 0-1", for real! Now with that out of the way...Here is some news to share and some reasons for you to venture out into that 1/4" of snow and enjoy yourself this weekend.

First thing that I am super excited to share with you guys is that our Men's room (sorry ladies, but just knock and you are more than welcome to take a peek in) has gotten a face-lift. The men's room was done by Salt's favorite and "House" Tattoo Artist Eric Hornung, with the help of local painter extaordinaire Alex Andrews, the owner of AHA Painting. The walls are adorned with the Flash Art of Eric...and in Erics own word's: "I once ate in a restaurant in Vegas where the paintings on the walls were done exclusively by one artist..Pablo Picasso. I'm no Picasso, so I think it's only fitting that my art is hanging in the men's room of my favorite restaurant, Salt. My hope is that it made your experience here a little more interesting, and you go back to your table and say 'hey, this is the coolest place i've taken a leak in a really long time, I think I'll get a tattoo now'. Thanks, Eric" We love what Eric has done and hope you all enjoy your visit to Salt just that much more because of it!! (Oh, and ya gotta check out the urinals, it takes pissing on conformity to a new level...CONFORMITY; the process by which an individuals attitudes, beliefs, and behaviors are influenced by other people.) Eric is also offering a special to all of you who may be thinking about your first tattoo or maybe just looking to fill in that last spot of un-inked skin behind your ear.....bring in your receipt from salt and get 10% off any tattoo at the spot Eric sets up shop at...and just happens to be one of the best shops in NJ, Eternal Grafix, at 283 Spring street Newton...

The Kitchen Specials this week:

  • Risotto; creamy arborio rice with spicy Italian sausage, fresh tomato, and baby spinach topped with hand-grated parmesan cheese and fresh herbs.
  • Hanger Steak; thin slices of garlic marinated hanger steak, flash seared atop our creamy smashed potato puree, topped with home-made tomato salsa and fried crispy tortilla strips.
  • Catfish; Southern Carolina Catfish, cornmeal crusted and lightly fried atop a buttery smashed potato with sauteed baby spinach and topped with a sweet corn and black bean salsa.

...........and don't forget Tony's incredible Southern Bourban Pecan Pie that we are now serving for a limited time through winter...and just like all of our desserts is made right here in our house...actually just like just about everything we serve here at Salt, fresh, never frozen and all made in house. From our ketchup, to our hand batterd to order fish and chips, to our hand cut fries, our fresh hand made burgers, the fish that we butcher in house, right down to our own crust on the pecan pie, and our scratch soups and browning bones for our sauces...we take our food serious, and pride ourselves on serving YOU the best we can!

The Bar

Beers this week are once again awesome, and I spend alot of time searching these out, so i hope you enjoy.....

  • St Bernardus Tripel....like the entire line of st Bernardus which we have been bringing in lately The Tripel is just an awesome example of a fine Belgian. This beer, with high fermentation, has a pale amber colour and a flowery, fruity taste with a harmonious balance between sweet and sour (8% alcohol content). This beer has a thick and vivid froth and strikes by its balanced taste with a delicate bitterness. Rate Beer gives it a "97" and Beer Advocate an "A"
  • Southampton Imperial Porter...This is Southamptons Seasonal Brew
    This is Southampton brewmaster Phil Markowski’s authentic interpretation of what an Imperial Porter would have tasted like back in the 18th century. Southampton Imperial Porter uses a unique blend of seven malts to give it a deep brown, almost black color and a smooth, full-bodied flavor that bursts alive with a pleasing, warming effect and notes of chocolate, toffee and caramel in every sip. Southampton Imperial Porter is perfect with smoked foods, earthy cheeses, desserts or simply by itself. Rate Beer give it a solid ""96" and Beer Advocate gives it an impressive "B+"

Wines:

  • Four Sisters Sauvignon Blanc, 2008 from South Eastern Australia. This hand-crafted wine was produced from the fionest grapes from preferred vineyard sites throughout South Eastern Australia. The nose and palate show a mixture of herbaceous, spicy fruit flavors and the finish is balanced with crisp clean acidity. this matches well with the crisp cornmeal crust and the sweet corn salsa of the catfish special.
  • Black Oak Pinot Noir, Italy. Deep, ruby in color with a lovely bouquet of sweet spices, even a dusting of cinnamon and nutmeg. The flavors are flowing with ripe black cherry, complex and clean layers, some plum tones meld into a smooth, velvety finish. This medium-bodied wine with its fresh acidity will compliment an array of meals. It has been suggested that Pinot Noir is a food-lovers wine as it pairs well with most seafood,poultry, pork, beef and lamb.
    The Black Oak Apulia Pinot Noir is a rare wine and at such a great cost. Cheers. We think is is a great complement to our Hanger Steak special, or any of our beef or chicken dishes.

  • March 14 sun. Salt's 2nd annual St. Paddy's Day Massacre...come join us for traditional Irish/American music by the one and only McBriz, bagpiper, McSorley's on Draft, giant Leprechauns, bangers and mash, corned beef, shepherds pie.....and all kinds of Mayhem!! Come get your irish on!
  • March 17 wed. St. Patricks Day...the madness continues! Read above and repeat!
  • March 25 thurs. Chris Barron, Grammy nominated lead singer of The Spin Doctors, will be doing a solo/acoustic show. This should prove to be an incredible night of hits spanning Chris' enitire career, including all the songs we have come to know and love and can't get out of our heads....Little ms, little ms, little ms can't be wrong......there it is!
  • April 8 thurs. Larry Kirwan, lead singer of Black 47 will be joining us for an evening of what he terms "Rock & Read"...think "Un-plugged" meets "Story-tellers"....Larry will be doing all of your favorite Black 47 hits in a scaled down version and explaining how all of these characters came to life in song.
  • Tix will be going on sale for Chris Barron and Larry Kirwan early next week!**

From the kitchen this week, Tony, Mike and the crew are putting out their amazing food with the addition of these specials..

  • Risotto; Creamy Toasted Barley Risotto with sautee'd portabella mushrooms, red onion and baby spinach topped with hand grated parmesan and fresh herbs.
  • Tuna; Panko crusted Ahi Tuna Loin served atop a chilled cous cous with an orange soy vinaigrette and wilted baby spinach.
  • NY Strip Steak; Grilled lemon and herb marinated strip atop a creamy potato puree with sweet roasted carrots and topped with a bleu-cheese butter.

Wines....

  • "Rivarey Tempranillo" from the Rioja region of Spain. With a touch of roasted figgy fruit, spice, and oak, this wine is fresh and vibrant. A perfect pairing for the Grilled Strip Steak!
  • "Aresti *Estate Selection* 2008 Sauvignon Blanc" from Chili's Curico Valley, this wine has yellow straw color with greenish tones. On the nose the wine is very intense, with prominent tropical aromas like passion fruit and citrus aromas such as grapefruit and lemon. In the mouth it is refreshing, flavorful, balanced and rounded. A perfect compliment to the Tuna special this week.

Salt News January 22

Another week of news to send your way.....

We'll start with the music this week.

  • We have just confirmed Grammy Award Nominated Chris Barron, the frontman of the Spin Doctors for Thursday March 25th. You'll remember there top 10 radio hit "Little Miss Can't Be Wrong" and "Two Princes" back in the mid-90's, Chris will be joining us for a special acoustic evening covering everything from the Spindoctors to his new solo stuff from his most recent album "Pancho and the Kid". Details and ticket info will be available at our web-site soon.
  • Everyone is asking about Black 47....we are in the works of trying to confirm a date for Larry Kirwan, frontman and writer of Black 47. Larry will be joining us for an evening he is dubbing Rock & Read, doing all of the Black 47 hits, reading his critically acclaimed poetry and just doing what Irishmen do best, telling stories...Info will be coming soon....
  • Steve Forbert tix are just about gone at this point, though their are still a few left...if you want to join us for the evening of Thurs Feb. 25 for an intimate evening with the Legendary Steve Forbert you can still grab a few tix here

This Weeks Beers...

  • Ithaca Brewing's "Cascazilla". The name CascaZilla is a play on both the name of a gorge in Ithaca called Cascadilla and the monster amounts of Cascade Hops they use to make the beer. The predominant flavor and aroma of this beer comes from fresh American hops. CascaZilla gets its distinctive red color from a healthy portion of caramel malt, which also lends to the beer, a hearty body and sweetness. It is a hoppy red ale!
    Beer Advocate gives it a B+......Rate Beer an 89 some good stuff!!
  • *Greens "Discovery"
    Inspired by strong European beers and developed to a closely guarded secret recipe, Discovery is brewed with a strong body, crisp taste and a refreshing flavour, losing none of the taste but all of the allergens. Don't let the "organic" or "natural" label scare you, this is a great classic "English Strong Ale".

Food Specials...

  • Risotto; Creamy Toasted Barley Risotto, a spin on a classic risotto, made with nutty toasted barley in a classic risotto style with sauteed baby spinach and carmelized sweet red onion topped with fresh herbs and fresh grated parmesan cheese.
  • Fish; Pan seared Mahi-Mahi atop lemon scented barley risotto with baby winter spinach and a lite citrus butter sauce.
  • Meat; Spicy soy marinated Skirt Steak, grilled and served atop a creamy potato puree with sauteed broccoli in a roasted garlic butter.

Wines....by popular demand we bring back..

  • Wily Jack 2007 California Cabernet Sauvignon.....The main characteristic of Wily Jack Cabernet is its bold yet approachable style. The Red Hills region of Lake County offers aromas and flavors blackberry, while the Hames Valley in Monterey County contributes ripe plum and dark cherry. The concentrated fruit flavors are accented by sweet vanilla and toffee from the oak aging and hold up to the well-structured tannins. It pairs up well with the bold flavors in this weeks "skirt steak" special
  • Cycles Gladiator 2008 California Pinot Grigio The pale-straw hue of Cycles Gladiator 2008 Pinot Grigio hints at the fresh, easy nature of the wine. A blend of Pinot Grigio and Muscat, it tantalizes with notes of ripe peach and pear, and floral aromatics. The palate is equally appealing, with flavors of tart green apple, lemon zest and wild honey. Acidity brings structure to the mix without overpowering the fruit and leads to a clean and pleasing finish. On top of being just a great wine, it has also been banned from being sold in the state of Alabama after being deemed pornographic by the ABC.
    "The ABC did, in fact, approve the label when the wine came into the market in 2006, but suddenly changed its mind late last year. We were unaware of the new ruling until now when it was deemed pornographic. This is a new phenomenon for the company, which has sold more than 600,000 cases of Cycles Gladiator across the United States and around the world since 2006. No one else has complained about the label art. We will dutifully comply with all state laws and is doing so in this matter." Now Hell, if it is banned in Alabama, it's all good with us!!! Gun Toting "Good", Boobies "Bad" hmmmm.... I'll take "gun laws" and "boobs" over "boob laws" and "guns" any day! We pair this with the subtle citrus and nuttiness of the "Mahi-Mahi" dish.

Salt News January 15

This weeks NaCl News...

Hi to all, lots to share this week...starting with Music on the Salt Stage:

  • As every week we have the music of Jon Wozniak on Friday @ 6:30, and Briz conjuring up the souls of Johnny Cash, Elvis, and Dylan...(oh wait Bob is still kicking around out there)..as well as Neil, Bruce, and Dan.....on Sat's @ 6:30 and Sun's @ 5.
  • Remember we are having Special Guest Steve Forbert on Thurs Feb. 25.  There are still tix available here
  • We have some real special evenings lining up for The Salt Stage..we are just ironing things out and confirming dates, as soon as we get that we'll share.  But stay tuned..lots of fun and surprises!! as well as some family/childrens shows by some special guests!

The Salt Shakers have been stirring up alot of talk and interest.  For those of you who don't know what the "Salt Shakers" are... it is Salt's running group.  We are going to get ourselves organized for the Spring and will be coming out with info and a schedule in March.  We'll be doing some road running, trail running, as well as some tri's...... We will be having people sign up and get info out through Facebook.

Beer this week:

  • By popular demand we are bringing back St. Bernardus ABT 12.  It sold out so fast last week that alot of you who wanted to try it missed out, so we doubled our order and brought it back for an encore!!  The absolute top quality in the hierarchy of the St. Bernardus beers. It is also the beer with the highest alcohol content (10.50 %).
    A dark ivory coloured beer with a high fermentation.
    The show piece of the brewery.
    Thanks to its soft and unconditionally genuine aroma, the beer can be smoothly tasted.
    The Abt has a very fruity flavour.
    Rate Beer gives this an unbelievable "100" pts.    and Beer Advocate gives it an "A", making this a "perfect" Belgian!!

Wines..... We brought in some interesting wines this week..

Salt News January 8

Hey Salties...some Salt News...

Well HELLO to everyone.....whew, we made it through another holiday season, and all in one peice. Now its off to a new year, packed with lots of fun, great new menu items to work on, new beer selections to bring out, great music lining up, and lots more fun to be had, people to meet, and memories to be made!  We hope all of you had  safe and happy holidays and are gonna come along for the ride with us!!

On the Salt Stage don't forget we have Steve Forbert coming in Feb. on the 25th..tix are selling pretty fast so get them while they are available here

Right now we are lining up March with Black 47 coming on Thurs the 18th.....I will let everyone know the details and info. on that as soon as i firm it all up.  We also have some big names lining up for our Spring calandar so stay tuned.

A dark ivory coloured beer with a high fermentation.

  • Risotto; creamy arborio rice with grilled chicken, tart Granny Smith apples and baby spinach topped with toasted pignoli nits and hand grated parmesan cheese.
  • Rib Eye; garlic and herb marinated rib - eye steak grilled and served atop hand-cut steak fries with sweet roasted winter carrots and topped with a bleu cheese butter.
  • Mahi-Mahi; wasabi crusted Hawaiian Mahi atop a Jasmine rice pilaf with sauteed spinach and a sweet Florida orange reduction.

  • Pork: Grilled bone-in Smithfield Pork loin chop atop a creamy potato puree with baby spinach and a fresh cranberry chutney.

Salt News December 4

Keeping it short and sweet this week.

At the bar our featured beers this week are

  • Curim Celtic Golden Wheat Beer:
    Bright and sparkling Curim Celtic wheat beer is brewed using a blend of pale malt torrefied wheat and caramalt. It is lightly hopped using Challenger, Mount Hood and Cascade varieties resulting in a refreshing light fruity beer with hints of peach, banana and plum.
  • Flying Fish "Belgian Abbey Dubbel":
    Winner of the silver medal at the 2008 Great American Beer Festival, this Belgian-style Abbey Dubbel is an exceptionally complex beer with many interwoven flavors. This classic-style Abbey beer features an immense head with a fruity nose and a generous body. Malty in the middle, the beer features a clean, almondy dry finish and a slight alcohol warmth. More like a wine than a beer—it has a lot of the qualities of a fine Burgundy.

Our Featured Wines:

  • New Jersey's own  Award Winning "Alba Vineyard 2008 Riesling";
    Exhibiting a wonderful floral aroma with hints of grapefruit and pineapple, our Riesling is a classic example of what this versatile grape has to offer. Finished slightly sweet, Alba Riesling goes especially well with "Pacific Rim" dishes, seafood or simply for sipping as a delicious aperitif.
           *This comliments our Tilapia dish with it's spicy tomato compote perfectly.
  • Rex Goliath "Shiraz"  won "double gold" and "first in class" at S.F. Intl. wine competition 2006
    Aromas of ripe raspberries and black pepper underscored by floral perfumed notes and pretty French oak. Lush flavors of jammy red fruit and plum supported on a platform of soft tannins. Good cool climate acidity suspends the flavors for a lengthy and thoroughly enjoyable experience.
               *This Shiraz stands up well to the pork tenderloin with its sweet cider reduction.

Kitchen Specials;

  • Risotto; fall harvest sweet potato and spinach with creamy goat cheese and fresh herbs.
  • Pork; grilled Smithfield pork tenderloin atop creamy potato puree with a granny-smith slaw and sweet cider reduction.

        Crisp bacon wrapped Iowa Farms Pork Tenderloin atop our creamy potato puree with a cranberry-walnut stuffing, sautee'd baby spinach and a rich pan gravy.     Matches perfectly with our Bianchi Malbec!!
  • Salmon:
         Grilled Atlantic Salmon atop a toasted cous-cous salad with baby spinach and an orange-wasabi reduction.  Matches with the Pannotia Riesling.

Hello to all,
A bunch of stuff to sprinkle your way this week, and we'll start at the bar!

The new "Fall 09" beer menu is in place starting today.....some of the beers we have added for you are:
Dogfish Head 90 Minute IPA, Rogue Dead Guy Ale, Stone Levitation Ale, Geary's Pale Ale, and Founders Red's Rye PA...just to name a few.  So if you are looking to try a few new and different beers at Salt I think you'll love our new mix.  While speaking of new beers we are also constantly adding to our draft as well.  This week we have our standard PBR for $2 but we also have Anderson Valley Winter Solstice, Ayinger Oktoberfest, Flying Fish Hopfish, Pranqster,  Southampton Double White  and will be adding this week Dogfish Head 60 min......

Our Special beers this week are New Holland Brewery "Mad Hatter IPA
Mad Hatter is an I.P.A. that explodes with hop flavors. Dry-hopping provides a distinctive and floral hop aroma, while the lively and hoppy body is subtly balanced with delicious malt notes. Hatter's hop character makes it a great fit for spicy dishes, bitter greens and beef.

Dogfish Head "Midas Touch"
This recipe is the actual oldest-known fermented beverage in the world! And not to let the beers dominate the entire Bar Spotlight, we have also changed the wine list for this fall and have selected all of our new wines based on their ratings/value in Wine Spectator Magazine, and how it fits into our menu.  We think you will be pleasantly surprised with our selections.

With the bar area still in mind, lets not forget...It's World Series time and of course you can follow the Series at Salt while sipping away at your favorite beverage, as well as watching The NY Rangers, perhaps a Knicks or Nets game..maybe a Premier League Soccer Match, or World Cup Soccer...It's all here at Salt.. This is also NYC Marathon Weekend and we wish the best to those running, especially Rose DiRenzo and the rest of our local runners.  I wish I was joining them this year, but had to postpone until next year due to lack of time to train sufficiently......but watch out next year!!

Moving on to the Kitchen.....this weeks specials are:

  • Creamy Rissotto with grilled chicken, Granny Smith apples and spinach topped with hand grated Parmesan cheese.

First things first.. big news.. Salt is being endorsed!!!! The headline from Eater.com "Rocco now endorsing Salt, in case you weren't wondering"...yes THAT Rocco, Rocco Dispirito. It's always nice to see "Salt" in the news!!

**Halloween Alert**...Salt is NOT doing a Halloween Party, NOT, it's just not our thing (now St. Pattys.. thats our thing). So for those of you who share the same Halloween feeling we do and don't want to stay in but also don't want to feel like you have to wear some goofy costume or something...Salt is here for you!!! Open all weekend doing what we always do!!!

We are heavy now into the MLB Playoffs, "World Cup" as well as "Premier league" soccer are unerway, the NHL is in full swing (and the Rangers are 6-1-0 !!!!) and the NFL Ticket is on Every Sunday!! So that will keep the "Pub" interesting for months to come!!

The Wild Turkey "American Honey" is back, it was a huge hit so we're gonna run with it. If you haven't tried it yet it has been rated as #1 in the world for "whiskey liqueur" by Whisky Magazine. We also mix it with Jameson Irish Whiskey for an "Irish Honey"!!

first some news and reminders.....

  • Salt just did a dinner at Hudson Farm this past Wed. to benefit Sussex County's "Project Self-Sufficiency" along with Andre's, Perona Farms, Doc's, and The Dining Room. It was a great dinner with each of us coming up with our own course for the menu and all coming together to put the dishes out, and all for a great cause.
  • Dan Bern tickets are still on sale and moving fast, we are half sold out at this point. If you are interested in getting tickets you can only get them here this is gonna be a great show on Thurs Dec. 10. You can also check out Dan at www.danbern.com .
  • The "Salt Shakers" have been busy this fall with an entire Team walking/running in Central Park for the Susan G. Komen Breast Cancer Walk, and also raising money for "Special Olympics" by putting a "Team Salt" into the ITC Triathlon in Mt. Olive. We will also have a small showing in November at the "OBX Marathon" running/walking in memory of Wayne Burkart.

  • Stoudts "Fat Dog Stout" Beer Advocate "A" - Rate Beer "97"
    A fusion of traditional British-style Stouts. This bottle conditioned ale merges the smooth complexity of Oatmeal Stout and the extremely rich maltiness and assertive hoppiness of Imperial Stout. The Fat Dog has an inviting silky black color, and a prominent roasted malt character, with a chocolaty coffee-like finish. Also a bit nutty. 9%abv.

    Imperial Espresso Porter

Originally produced to celebrate our 10th anniversary, this has now become our late-winter seasonal. Note the aromas of toffee, licorice and coffee roastiness. Then take a sip--there's a malty richness on the palate followed by chocolate, coffee, spices and perhaps even some licorice character from the Mount Rainier hops. Some Salty News for y'all.....

Lots of stuff to squeeze in this week.....

......that's a clever game!! Thanks Donna, Barbara, Sandra, and Patricia!!

A Salt Exclusive... Dan Bern... will be making a first ever appearance in our area. Dan will be joining us at Salt for an evening of song and fun on his way to be playing larger venues in NYC. Info and tickets can be had through our website here. Tickets are limited and are already selling quickly, so don't miss out. The dining room will not be open that night for dinner and food will be available at the bar for a limited time before the show. It will be a standing room only show and full bars will be available.

The Beers this week are once again amazing....

To start we have... Lagunitas "New Dogtown Pale Ale" which gets and "A" from Beer Advocate, and a 90 from Rate Beer. This is another one from those crazy guys out in Petaluma CA and definitely worth a try!!

Next we have Weyerbacher "Old Heathen Imperial Stout" which pulls in a B+ from BA and a solid 96 from RB. Here's what they say about it...
Rich, velvety and deliciously complex, Old Heathen (8.0% ABV) is a truly distinctive stout. We use seven types of malt and two varieties of hops to bring forth this big brew. Quite robust and roasty on the palate, Old Heathen Imperial Stout has a wonderfully fruity nose and a moderately dry finish. The taste is highly complex - perhaps you'll even discern notes of espresso or chocolate. Old Heathen Imperial Stout is our interpretation of a beer style that originated in the 18th century. Brewed in England and exported to Germany, Scandinavia and Russia, these beers became fashionable among the members of the Czar's court. In order to survive long voyages they were brewed with high alcohol content to prevent spoilage. Like most of our beers, Weyerbacher Old Heathen is a perfect accompaniment to foods. Try it with rich stews, oysters, caviar or roasted meats. Old Heathen is also a perfect companion to chocolate desserts.

And we threw in a third one this week for fun...Long Trail "Harvest" their answer to the Oktoberfest beers....BA gives this one an "A"...another seasonal "must try"!!

Also, a new addition to the bar this week is "Wild Turkey American Honey" picked by Whisky Magazine as "The World's Best Whisky Liqueur" is a most excellent liqueur just to sip, or even better in our "Irish Honey".....1part American Honey/1part Jameson Irish Whisky!! Cheers!!
Coming soon will also be a line of high end Single Malt Scotch....Some "Vampire Vodka", Ports and Sherry's......Keep an eye out!

On the Food Front...

The specials coming out of the kitchen this week:

  • Creamy Risotto with rock shrimp, corn, and red onion with hand grated pecrino and fresh herbs.
  • BBQ Beef Saute', thinly sliced bbq marinated hanger steak flash seared atop a creamy potato puree' with roasted sweet carrots.
  • Grilled citrus marinated tilapia atop a chilled cous cous salad with sautee'd baby spinach and finished with an orange gastrique.

We also have some new additions to our menu for the fall/winter season:

We have a new Pumpkin Salad, Guinness Onion Crisp, Beer Braised Boneless Short Ribs, Chicken Paprikash and Bloody Prawns (both back by popular demand!!!) as well as a few other items...so come on in and try some of the new dishes Tony is putting out.

And I guess Last but not Least....

There is a benefit being held at Hudson Farm, "The Hudson Farm Autumn Harvest Shoot and Taste of Autumn Restaurant Showcase" to benefit Project Self-Sufficiency.
The dinner will be a 5 course tasting being put out by...Yours Truely, as well as Andre' DeWaal from Andre's, Don Luisi from Doc's, Kirk Avondoglio from Perona Farms, and Tim Harder from The Dining Room. I will be preparing a Seared Wild Salmon atop a Fall Beet Risotto Cake topped with Garlic Swiss Chard and a Balsamic Cider Reduction. On Thursday December 10 Salt will be presenting live Dan Bern ( www.danbern.com ). Tickets will be available through the Salt web-site in about 2 weeks. We are super excited to bring Dan to Byram for an evening and to kick off a new Music Series we will be presenteing on a regular basis. What do you think?

more news.....We have McSorleys back on draft, but for a very limited time. One barrel has been tapped and once that is gone..its no more at Salt!! (union issues at the brewery) so get it while it lasts!

We have some more awesome beers to present this week at the bar

  • four + brewery out of Utah has a great "Punk'n Harvest Pumkin Ale" which is a blend of pumpkin essence ans spices. No better way to bring in fall!!
  • Saranac "Oktoberfest". Saranac Octoberfest is a med-bodied, copper colored lager. It's rich, malty taste is subtly balanced by Saaz and Tettnang hops. The beer is aged slowly in the tradition of the Octoberfest beers of Munich.
  • Afflegem Belgian Blond This is a Belgium Abbey Beer, the Abbey itself dating back to 1074. This beer scores an "A" from The Beer Advocate and has received numerous awards through the years. A Salt mainstay now!

From the Kitchen this week we have

  • Risotto, with portabeelo mushrooms, sweet asparagus and grilled chicken topped with creamy goat cheese and fresh herbs.
  • Chicken "La Bampa" cornmeal crusted breast of chicken atop jasmine rice with a fresh tomato cruda and a fiery sriricha cream sauce.
  • And a new item to go onto the Fall menu next week...Beer braised boneless short ribs atop a manchego cheese risotto cake and sweet asparagus...fast becoming a Salt Fav!!

One last thing...this Saturday...the 2nd annual "Salty Dawg Hot Dog Eating Contest"...being judged by the Mayor Himself Jimmy Oscovitch, as well as both Mr. & Ms. Byram. Look for Laurie and "Ralph" walking the grounds to sign up! Gonna be tons of fun!!

Salt News September 18

Ok, we'll try to make this one brief.....

First things first..Our comment card of the week:

Before I get into the beers this week, some news to share. We just installed a new Keg System here at Salt, and added one more line...we now have 6 drafts all the time and always icey cold!!! YAY!!!

That being said, because of a huge demand we have again Afflegem Blonde, and as of next week it will be added to the permenant menu!

We also have on draft ** Flying Fish "Oktoberfish". First released in 2002, its a tribute to the classic Fest styles of Germany the O'Fish uses European malts hops and yeast. A beautiful reddish color, a savory malt profile and nice hop flavor, make this Fest beer quite drinkable. OktoberFish is great with food and especially great with Lederhosen.

We also have on draft North Coast Brewings "Pranqster" Belgian style ale. Belgian Ales represent the height of the brewers' art. Sophisticated brewing techniques, yeast blends and unique flavoring elements have elevated the beers of Belgium to the status enjoyed by wine in other countries. PranQster follows in this tradition using a mixed culture of antique yeast strains that produce a floral nose, a full fruity flavor and a clean finish. Beer Advocate gives this beer an A+!!!

The kitchen is putting out equally as tempting dishes.

We have:

  • Creamy risotto with spicy Italian sausage, fresh tomato and roasted red peppers topped with hand grated imported parmesan and fresh herbs.
  • Ale braised boneless short ribs atop a Manchego cheese risotto cake with garlic roasted asparagus.
  • Steam Pot; A melange' of fresh seafood steamed in a white wine and garlic broth with fresh tomato, spinach and red onion atop jasmine rice.

Speaking of the food items, the new Fall menu is in the works and should be up next week..I will keep you posted!

A couple of changes in faces here @ Salt as well. We will be saying "Good-bye" to Mr. Ben Crater. Ben is leaving us for the Art Institute of Philly!!! We wish him the best down there and will miss him! Joining us Ms. Laura Sappio out in the dining room, and Mr. Tyler Kimmelman is back behind the Salt bar now on Friday evenings, and Alyicia Messina is back there on both Sat evenings as well as all day Sunday!!! Welcome all!

Don't forget, Sudays is NFL Ticket @ Salt starting at 1:00pm!! with give-aways and drink specials!! And of course Alyicia ( we let her work even though she IS a Cowboy's fan) serving you up a smile!!

*The NFL Ticket starts this week!!! So this Sunday come on in and watch you favorite team hopefully kick some ass, have a few beers, some tasty food and enjoy. Why pay for the ticket at home when you can have us pay for it for you?..Get your cold beer for you, serve you up food, and even clean up after you!! Damn, I need to get me a Salt at home!!

*This Sunday is the First Annual Salt Shakers Walk/Run in the Susan G. Komen "Race For The Cure" 5K in NYC's Central Park. We will be walking with friends and family to raise money for this unbelievable cause. Think about joining us next year for the walk/run, it will be a fun day for a great cause!!

*The 2nd Anuual "Salty Dawg" Hot Dog eating contest will be taking place on Sept. 26th at the Byram Day Festival @ C.O.Johnson Field at 1:30....Come see how many hot dogs you can shove in your face and try to beat last years KING, David O'connor. Sign ups start this Saturday. Forms and rules can be picked up at Salt!!

Now the Beers for this week are:

Our second beer is Anchor Porter; Anchor Porter is a unique dark brew, which was introduced by Anchor Brewery in the early 1970s. Anchor Porter, like all of Anchor Brewing Company's products, is brewed with only natural ingredients. Specially roasted dark malts are used, along with a top-fermenting yeast. The brew is hopped at a very high rate, and is naturally carbonated to produce an intensely rich flavor and thick creamy head. Risotto; creamy aborio rice with granny smith apples and brussel sprouts, topped with fresh hand grated parmesan cheese.
Tuna; Pan seared Hawaiian Tuna loin with jasmine rice and tender baby bok choy finished with a sweet soy reduction.
Short Ribs; Beer braised boneless short ribs atop a Manchego cheese risotto cake with garlic roasted asparagus...Match this dish up with either of the beer specials and you are in for a treat!!

Salt News September 4

Some Salt news to pass on,

Here we are already at the end of summer and sitting on Labor Day Weekend, and what looks to be shaping up to be the best weekend of the summer, weather-wise. With that being said, and it being a 3-day weekend, lets get right to the beer....

This weeks special beers are just that...quite special this week.. We have
Victory Brewing Co. "Old Horizontal Barleywine": now for those of you unfamiliar, don't let the "barleywine" throw you off....first off, this "beer" scored a whopping 100pts from www.ratebeer.com , and an "A" from Beer Advocate. Second it is merely a "strong ale" and typically higher in alcohol than most ales, which is why it is compared to a "wine", hence the "barleywine" name. This "Old Horizontal" is a luxurious, warming Ale rich with aromatic hops and dark, candied fruit character that hides its epic strength masterfully.
Our second beer is also quite a find...
Affligem Blonde, This is a Belgium Abbey Beer, the Abbey itself dating back to 1074. This beer scores a B+ from The Beer Advocate and has received numerous awards through the years...This is the perfect beer to drink away the summer and accept fall with open arms.

I have to say, these two beers are two of the best we have brought in here at salt to date, but you can be the judge of that...come on down, give them a try, and let us know what you think.

From the kitchen we have specials that are also right up there...Tony is working with some great local produce people to put together some end of summer dishes that are just awesome.

To start we have
Risotto, with fresh East Coast Sea Scallops, fresh local tomato and red onion topped with hand grated Parmesan and fresh herbs.

Catfish; cornmeal crusted Carolina Catfish atop creamy potato puree topped with a grilled local corn salsa and served with an orange scanted gastrique.

Pork Chop; marinated and grilled on the bone atop potato puree with sauteed spinach, a "Windy Brow Farm" peach chutney and a sweet peach sauce.

This week we welcome to the Salt Family, Ms. Molly Michaud. Molly will be joining us as a bus-person out in the dining room, so if you see her bopping around give her a big smile, we're happy to have her join our team!!

Just a couple of quick notes..

A Salty Day to you all,

And once again what is predicted this entire weekend.....RAIN of course!!! Keep dry at Salt!!

So here’s the ins and outs and goings on's here at Salt.

From the "Gastro" side of Salt we bring you:

Risotto:
Grilled and diced chicken with an array of roasted local organic vegetables, hand grated Parmesan cheese and fresh local herbs.

Seafood:
Autumn Steam Pot; A mélange' of fresh seafood and local late summer veg, steamed in a lite white wine garlic broth atop jasmine rice.

Meat:
"Windy Brow" Pork Chop; hand cut "bone-in" pork loin chop atop a creamy potato puree with sauteed baby spinach and a sweet "Windy Brow" peach sauce. From the "Pub" side: This weeks special beers are Flying Fish "Oktoberfish". Everybody needs a change of pace once in a while. With that in mind we try to bring in a variety of seasonal beers. Eel River "IPA". This is not only the 09 gold medalist at the Los Angeles International Beer Competition (amongst numerous other medals since 2003) but it's brewed with the finest Organic malts and hops.Pale and crystal malts come through with a malty caramel sweetness, balanced with aggressively clean burst of fresh hop flavor in the middle palate without lingering bitter astringency. This pairs up perfectly with this weeks Windy Brow Pork Chop!!!

Something to share with you all, and any feedback is welcome.......

So, as most of you are aware, and those that weren't 1 second ago now are, Salt Gastropub has a facebook Facebook page where we try to be open to and keep in touch with all of YOU! At times I will make comments about just random crap going on in the Salt world. Last week I had put a post up bitching about the govt. control in the liquor industry and how because they are involved in it, it is just a world of nonsense and incompetence, comparing it to other govt. run things.

I received a response, which I love to get (honestly), and he/she stated:
"I find it interesting that you feel comfortable posting comments so politically charged when you are the owner of a public eatery. Aren't you afraid you may alienate some of your clientele?"
My reply to this was, and tell me what you think of this whole thing..
"Hi---,
I wouldn't want to alienate anyone at all, nor am I choosing sides. Yet I always think it is good policy to question, no matter who is in charge, and I think the more we as a country can discuss these issues without choosing sides the better off we all are. as far as my comments, i do feel strongly that when the government tries to make things better or fix things, they tend to make things worse and break them. i was just pointing that out. If that is politically charged I guess so be it. I would hope the clientele we attract here would be able to make up their own minds on issues and would not be offended by an opposing view. What better place to discuss politics of the day than at the local pub, it's been going on for centuries... And I hope this doesn't come across as crass, i really am saying this in a friendly way, but know how e-mails can sound sometimes...and i do appreciate the comment!"

This week we say "Good-Bye" to Shea deBrito....Shea has been a great person to work with and her salt Family will miss her much!!! We wish her the best of luck up in U-Mass!!
Also to writer Mr. Dominick Dunne who was a great customer of mine in a past life at Mortimer's, sad to see him go! And have to acknowledge Ted Kennedy...the last of the clan...and boy did he outlive them all, in many more ways than one!!!!

And just a couple more quickies....

Salt News August 20

Here we are again.......another weekend, more rain, and more great reasons to come join us at Salt this weekend!!

Here's what's going on here...

Let's start at the bar and tempt all of the senses......
Sight: Yankees/Red Sox this weekend Fri @7pm, Sat @4pm, and Sun @ 1:30pm......and the mets, well who cares at this point, but if you do, they play Philly all weekend all @7pm.......but watching Jamaicaan Cricket League may take precedence over the lowly mets.
NFL has kicked off with Dallas/Tenn on Fri @8pm. Pitt/Wash on Sat @7:30pm, Denver/Seattle @10pm.....and on Monday is the J-E-T-S v Baltimore @8pm....

Sound: Friday 6:30-9:30 is Jon wozniak banging out his swinging style of acoustic favs...Sat 6:30-10:30 and Sun 5:30-8:00 is Briz. From Belmar NJ, Briz brings his now famous sounds to Salt, always a favorite!!

Touch: Well, whether its wrapping your hand around a cold beer, running your fingers through your lovers hair, or scratching that itch on your ass, you can feel home at salt. Just no touching the bartenders, no fists hitting anyone or fingers waving in the air. This is a classy joint!!

Taste: All of your favorite pub fare is here....sliders, wings, nuts, salads, mixed grille, bar pie.......can't go wrong here at the Salt bar!!

Smell: Take in the smells of all of the great food coming out of the kitchen, or maybe the smell of hops from the taps or maybe just that fine cologne that Jim is wearing behind the bar........it all adds to the Salt experience!!

New at the bar this week is:

Lucid Absinthe.....come taste the drink that drove Van Gogh to cut his ear off for his loved one, the drink that was banned in the US for years because of its reputation for causing hallucinations and making people think crazy thoughts......this is the real deal, and done in the traditional style, over a sugar cube with ice water. You have to experience it.

Beer: North Coast Brewing "Old Stock Ale 08"...this is one of the highest rated beers out there right now, and with a year of cellaring under it's belt, this is a beer to be savored like a fine Port......not a swigging beer...that what the $2 PBR pints are for!

Now for the Kitchen...Tony is really putting together some excellent food for you to enjoy..

The special Risotto this week is with Grilled Local Corn and Rock Shrimp with fresh herbs and hand grated parmesan.

Carolina Catfish, crusted in cornmeal atop creamy potato puree, topped with a fresh spicey corn salsa and a house roasted garlic butter.

Grilled Rib-Eye; lemon and garlic marinated and put atop a buttery smashed potato with grilled local veg and a rich herb-scented house made demi-glace.

Our "Chain Restaurants Are For A**holes" T's sold like hotcakes. Sold out of our first shipment in one week......but don't fret, the second shipment is on its way in both white on black as well as *new* kelly green on white!! and for only $12 you can't beat it, tell everyone how you feel about these chain "restaurants"!!

**HAPPY HOUR ALERT**
Happy hour has just gotten happier!!
Starting Monday August 24 Salt's "Happy Hour" hours art Mon 5-6:30 and Tuesday - Friday 4:30-6:30.

Monday: $1.50 pints of Pabst Blue ribbon.....damn, are we crazy....this is one of the hottest beers around and we're doing pints a buck fifty...you can't get a pint of water for that!!!

Tuesday: Bucket O' Nip's....hey,hey, keep your mind out of the gutter...these nips are 7oz. beers. As in the famous word of Marie Antoinette "Anything more than a mouthful is a waste" and who can argue with Marie Antoinette. 5/ $4.....whaaaaatttttt.....yea thats right, $4! crazy yea, so what!

Wednesday: "Mystery Buckets of Beer"..this is a mix of beers left from our weekly specials, and a great way to try some different beers. They are mixed at the bartenders discretion and no subs or "requests"....cmon, you are getting some awesome beers at pretty much cost!! This is offered all the time, but not at this price. 3 beers for 8 bucks!!

Thursday: $1 off all "Well" drinks....that makes well drinks $3....."Very Well"!!

Friday: "Chicks with Nips"..get an order of Salt's famous wings and 2 nips for $5......chicks with nips for $5 , what do we think, this is the Playboy Mansion? nah, just a fun place with great food, great drink, and a shot of fun!!

And last but not least.....
I Just got an E-mail from Mr. Ted Allen...he is telling me that "Food Network Canada" has just picked up Chopped...so Salt is going International....who woulda thought!! Air date is still looking like late Dec, early Jan..but now not only can you catch Salt throughout the entire US on Chopped, but if you happen to be in Canada during it's airing you will still be able to catch it!!!!!

Salt News August 13

Hi to all our Salt fans!

It's that time of week again to fill you in on some Salt News...

First, some things coming up on the Salt calendar…

BYRAM DAY, Sat. September 26 @ 1:00pm will be the 2nd annual "SALTY DAWG” HOT DOG EATING CONTEST! It will be held on the "big stage" at Byram Day, and should prove to be a blast. This is open to anyone 15 and older (parents permission needed under 18). Come see if you can beat out last year’s champion, David O'Connor, and take home the huge Salty Dawg trophy. Details will be coming out soon in the following weeks, so mark it on your calendar.

Salt will be closed on Labor Day, Monday September 7th for our annual "Salty Christmas in September Party" for all of our employees...a well deserved good time for all in the Salt Family!!

Starting on Monday, August 24th, our "Happy Hour" will be expanding with some fun stuff at the bar. Some of that will include $1 off well drinks, buckets of "nips", mystery buckets of beer, beer and food pairings, and a special "Salt Happy Hour Membership Card" with rewards!! Details will be in next week’s news on all of the happy hour specials..

This week at the bar we are featuring on draft Abita Purple Haze. Purple Haze is a crisp, American style wheat beer with raspberry puree added after filtration--you may see raspberry pulp in the beer. The raspberries provide the lager with a subtle purple coloration and haze, a fruity aroma, and a tartly sweet taste. This has been a Salt favorite every time we bring it on.

Our bottled beer this week is Southampton IPA. This IPA is balanced between the hopped-up West Coast-style IPA’s and the Old World characteristics of a traditional European IPA. You could say that Southampton IPA is located somewhere between Europe and California, figuratively and literally. It uses three grains and a blend of three American and two English hop varieties to make this complex and delicious IPA. Its full of floral hop aroma and has fruity apricot and grapefruit overtones. It has an assertive hop flavor and a refreshing hop bitterness while still showing plenty of caramel malt character to balance the flavor. It features more balance than any other IPA brewed in America. The result is an American-style IPA with the Old World characteristics of a traditional European IPA.

Also at the bar right now is Pre-Season NFL as well as the start of World Cup Soccer....and for those of you whom still might care the Yankees and the lowly Mets are still at it. One keeps winning, and well, the other, just sucks......come cheer and jeer!

Coming out of the kitchen this weekend…

Fresh Jersey corn and tomato risotto with red onions, fresh herbs and hand grated parmesan cheese (a classic Jersey dish for this season!)

Tilapia en Papillote; fresh tilapia filet, steamed in parchment paper with asparagus, red peppers, carrots and red onion in a house roasted garlic butter—served with an aromatic jasmine rice—break it open and just breathe in the flavor!

Grilled garlic marinated rib eye steak, served atop a creamy roasted red bliss potato salad and roasted local vegetables with a sweet balsamic reduction

What a great time to live in Sussex County and enjoy its bounty!

So come on in and get comfortable-- have a nice cold beer, some great seasonal food, enjoy some live music, and just breathe! You will see for yourself why Salt was picked as Sussex County’s “best all around restaurant, caterer and wait staff!”

And just to answer the question you have all been asking…when is this damn “Chopped” episode gonna air??? Latest word is Dec/Jan. We’ll let you know as soon as we hear!

Salt News July 30

Hello again Salt fans,

So here we are looking at another wet weekend here in the Garden State....
Fortunately things are dry and cool here at Salt.
We have a couple of new beers to offer this weekend...The first being on draft is Red Hook ESB. It's making a comeback on draft due to the huge demand. And I can't say it any better than they do "Redhook refrshes the thirsty, rewards the brave, enlightens the ignorant and strives to stamp out jerkdom". The other is Long trail "Double-bag" which is a dark amber ale with an ABV of 7.2%. Was picked "Beer of the Year" back in '01.

Tony has some great specials coming out of the kitchen this weekend as well. We have a Seafood risotto, with a melange' of fresh seafood, fresh grated parmesan cheese and summer chives. Off the grill we have a Curry Dusted London Broil! Grilled to your liking and served atop a sweet potato puree with roasted summer asparagus and sweet carmelized onions. From the sea we have Pan Seared Hawaiian Big Eye Tuna, seared and served atop an aromatic Jasmine rice, with sweet glazed carrots and a spicy soy reduction.

This weekend at the bar we will feature on Friday and Saturday The Mets/Diamondbacks, and The Yanks/White Sox.
We will also be showing the World Soccer "Peace Cup" 2:30 is Juventus V. Real Madrid and at 4:30 is FC Porto V. Aston Villa.
Sat night is also MLS 8:30 Houston Dynamo V. DC United

And as Always..Live music Friday-Saturday-Sunday..gotta love it!

On Friday the NEW Salt T's should be arriving!!! We have the "Classic" Salt T, and then we have something a little different which kind of shows our sense of humor..but you'll have to check them out for yourself!

Salt News July 23

Hello Salt fans,

Some Salt news to keep everyone up on what's happening here at your Pub!
First things...you may notice some new faces here, you may also notice some faces are no longer here, you may also notice some of the same faces doing different things, so here is how that is...

the Salt family is saying "Good-Bye" to a couple of people..Waitstaff Mark Michaud is packing up and heading off to college down at West Virginia where we wish him the best and look forward to seeing him back on his breaks. David O'Connor, a Salt staple here both as waitstaff as well as kitchen, is taking his show out to the West Coast, San Diego to be exact. Both will be missed!

Joining our dysfunctional Salt family are Dave Healy behind the bar, Chelsea Iorlano as a buss person, Alycia Messina as waitstaff, and Gil Sosa in the kitchen. We welcome all of them and are glad to have them on board!

A couple of promotions are Pat Lynch has moved onto our management team, and Corrine Wheelwright has moved from a buss up to waitstaff!! And last but not least we welcome "back" to Salt the one and only Mr. Ben Crater. Ben has re-joined us in the kitchen after a short hiatus and realizing he cannot live without us!

What's happening at the bar.....
The Tour de France is what's happening, come check it out. It runs from July 4 - July 26, and is on every day here at Salt.
Come check out the FIFA World Cup Qualifiers starting on Aug 12 with Mexico v. USA in Mexico City. We'll be following this right through to the finals in South Africa on July 11 2010.

And as always come in and check out the "NY Yankees" and "replace-Mets" as at least one of them hurdles down the stretch towards the play-offs.......
Some of you may have noticed that we now feature $2 pints of the "Classic" Pabst Blue Ribbon at the bar. Give it a try, you'll be pleasantly surprised.....If a classic Americana beer ever deserved a second coming this is it!!

We also have Uinta Anglers Pale Ale...A traditional northwest style pale ale with a rich copper color and clean yet complex malty fullness. Uinta is brewed in Salt Lake City Utah and is quickly becoming one of the top craft beers ou there. They also keep in line with something important to us here at Salt, sustainability in the environment. Uinta Brewing is 100% wind powered, preventing 444 tons of corbon dioxide a year from being released into our air, the equivelent to not driving 951,270 miles!! Mako shark, seared and topped with a panko and horseradish crust with jasmine rice, grilled summer asparagus and a cool mango orange reduction.
Grilled Flat Iron steak with a red wine emulsion sauce and creamy smashed potato.

Owner of Salt Gastropub to Appear on Food Network’s Chopped

Byram Township, New Jersey. This Friday, May 22nd, Byram's Bradley Boyle, will be heading to the Food Network Studios in New York City to show the world his "Chops", quite literally. Mr. Boyle, the owner of Byram's Salt Gastropub, will be appearing on the Food Network’s competitive cooking show, "Chopped". "Chopped" is a fast-paced cooking competition pitting four chefs against each other to cook three courses from a blind basket in a short period of time. After each course, the dishes are judged by a "celebrity chef" panel of judges and and one chef is "chopped." In the final round, two chefs are left standing to compete for the grand prize.

Mr. Boyle is a graduate of the prestigious Culinary Institute of America and a protégé' of Chef Daniel Boulud at New York City’s famed Le Cirque. Before opening Salt in April of 2008, Boyle was the chef/owner of Bula in Newton. During his eight years at Bula, Boyle was highly praised by The New York Times, The Star Ledger, The Artful Diner, as well as many other critics and press.

After an eight-year run with Bula, Boyle decided to take the show about eight miles South of Newton into Byram. With the opening of Salt, Boyle decided to change culinary gears a bit. With a lot of thought and preparation, Bradley, along with his wife Laurie, his sous chef for five years at Bula, Anthony Mandeville, and new Manager Jennifer Hornung, he opened Salt Gastropub. Putting Tony into the chef slot and stepping into more of a managerial role with Salt, Mr. Boyle once again hit the ground running. In just their first year of operation Salt has secured a solid spot on the culinary map. Salt has been recognized by The New York Times, and right out of the box was picked by The New York Times to be in their Year End Review as one of the Top 10 Restaurants for 2008. During Salt’s first year, the restaurant was also recognized by The Star Ledger, the Artful Diner, and most recently by the people of Sussex County, voting Salt the "Best All Around Restaurant" and "Best Caterer" in Sussex County in the New Jersey Herald’s Readers’ Choice Awards.

Chopped will just be another chapter in the long culinary story Mr. Boyle has written for himself over the 25 plus years he has worked in the restaurant industry. Rest assured, this will not be the last chapter! Win or lose you are sure to be hearing a lot more from Mr. Boyle and his "band of merry renegades," as David Corcoran of The New York Times referred to the team he has put together. Boyle states, "You have to always be fresh, always be thinking, always just pushing the envelope just a little bit. You do it for the sake of your staff, to stay true to yourself, and most importantly, for your customers—to keep them wanting more and wondering, 'what’s next?'." With thinking like that, we can't wait to see!

Ok all of you Salt fans.....we are right on the heels of our one year anniversary, that being said, we are also very close to our 20,000th guest check!  If you were trying to think of an excuse to come in, well, we are going to be giving away a gift certificate for a dinner for two to the lucky 20,000 check!!  As of Saturday evening April 4 we are at 19,376 and counting, so it won't be long!

A NEW ADDITION TO SALT......

Ralph

Say "HI" to Ralph.....Ralph is the newest addition to the "Salt Family". Ralph is a 8 year old pure bred English Bulldog, a "Bully" and was a rescue from the City of Poughkeepsie Animal Shelter. He quite spry for his 8 years and full of snot and charm. Ralph will be hanging at Salt most days keeping me and the staff company as well as making his rounds downstairs once in a while. Ralph likes to keep the exercise down to a bare minimum, so you may not see him "running" the property, but perhaps on one of his leisurely strolls.

Since picking up a guitar at the age of 14, B.D. has studied with such jazz luminaries as guitarists Mike Stern, and Vic Juris, as well as pianist Charlie Banacos.

After graduating from Musician's Institute in Hollywood, CA., B.D. continued his studies at the College of New Jersey, where he graduated with honors.

the bandHe has played in bands ranging from pit orchestras to rock bands, big bands to jazz combos and even an Elvis impersonator!

B.D. has released 4 recordings of his melodic jazz/funk (Tell The World, Lost and Found, Simple Life, and Tomorrow's Too Late) and has recorded or performed with such artists as Randy Brecker, Mark Egan, Richie Cannata, Mark Ledford, Ada Rovatti, Greg Federico, Jeff Callahan, John Virag, MAOR, Blue Number Nine, Kathy Phillips, and Ron Velosky among many others.
Hailed as one of the top 20 "up and coming" NJ jazz artists by the Newark Star-Ledger and featured in the New York Times, guitarist B.D. Lenz leads a band that is very funky, highly melodic, and supremely groovin'. Lenz and crew have released five CD's of their original contemporary jazz, which fuses virtuoso musicianship with expert songwriting. Joining B.D. will be bass wiz James Rosocha, and groovemeister Tom Cottone on drums.

Featuring keyboardist/singer Scott Monetti on the 11th and 25th.

B.D. will be bringing his spin on classic Motown and Funky Blues to Salt for 4 evenings starting July 11 and followed by the 18th, 25th, and August 1.

Shows all start around 10pm and are 21 and over!

 

 

Project "Welcome Home"

We are bringing to Salt something we had started at bula, and something Laurie and I feet strongly about....Project "Welcome Home". We are offering a night out on us to anyone returning from being deployed overseas fighting for our country. If there is anyone who deserves a nice meal, a hand-shake, a BIG THANK YOU, and a night out with his/her loved one its these guys/gals. We offer complimentary dinner for two, and it's our way of saying Thank You.

We will be working with local police dept's and VFW halls, and just ask any of YOU, if you are, or know of anyone returning home from service to contact us or just stop in. This is in no-way a "Hand-Out"...this is a "Thank You".

So as we are enjoying our summer here in beautiful Sussex County and enjoying spending time with OUR family and friends, let's just all remember these Men and Women who are overseas putting there asses on the line for us day-to-day.

New Jersey's First Gastropub

Bradley and Laurie Boyle of Byram Township are the former owners of Bula Restaurant in Newton. Bula received many accolades including those from the New York Times, ZagatSurvey, and The Star Ledger. Having recently sold Bula, the Boyles have embarked on a new venture in Byram. After purchasing the property formerly known as 76er’s Waterloo Inn, the Boyle’s set to work to open Salt, a Gastropub. Of course, the explaining they have had to do is defining exactly what a “gastropub” is.

Back in 1991, the first-ever gastropub, The Eagle, was opened in Clerkenwell, London . What differentiated The Eagle from a typical English pub was the emphasis placed on the quality of food served. In the simplest terms, a gastropub is a restaurant with a relaxed pub-like setting, offering a particular cuisine prepared as well as it is in the best restaurants. Staying true to the format requires a menu that complements the assortment of beers and wines a gastropub offers. Fare at a gastropub is priced to encourage frequent visits to the establishment.

The Gastropub trend made its way across the Atlantic in 2004 with the opening of New York ’s trendy West Village gastropub, The Spotted Pig. Since then, more establishments have opened across the country. After extensive research, the Boyles have determined Salt to be the first New Jersey gastropub. The couple plan to open Salt in April.
